Presented by Ajinomoto Philippines Corporation in partnership with Solane and La Germania, the Umami Culinary Challenge was participated by 14 schools in the Visayas.
The trio of Gemarie Deluso, Cristel Mae Cernardo and Vincent Borda were declared champion on Best Umami Filipino Dish category for their recipe, Binalot na Hito at Liempo. They will go for back-to-back title in this category after winning the 1st place in the national level last year.
Western Institute of Technology and Guimaras State College completed the top 3 for the category.
Crab and Prawn Pasta in Rich Fresh Tomato Sauce by Ma. Rutsheel Rios, Andrea Pesongco and Mark John Dela Cruz of Hercor College also bagged the first place in the My Own Umami Creation category. ISAT-Miagao won the 2nd place and Northwest Samar State University got the third prize.
St. Paul University of Iloilo stopped the winning streak by winning first place in the 2015 Umami Master Visayas contest, followed by Guimaras State College as second, and Hercor College at third place.
First place winners received gold medals and P10,000; second place winners got silver medals and P8,000; and third place winners – bronze medals and P5,000. Teams who will compete for the National Cooking Showdown in Manila on January 30, 2016 will have a chance to win additional P15,000.
The event also featured Aminomazing Showdown, a flair tending competition joined by 5 teams. Chefs Eugene Raymundo and Sau del Rosario, together with Ms. Nancy Reyes-Lumen also conducted cooking demonstrations for culinary students.
Dr. Celeste Tanchoco, Board Member of Nutritionist-Dietitians' Association of the Philippines (NDAP), led the Umami Quiz contest and handled the Umami Conversation segment which dispelled the misconceptions on monosodium glutamate (MSG) and highlighted its benefits and role in giving distinct taste to dishes.
